Potato cakes are pretty ubiquitous in the UK, with many regional variations. This recipe for mashed potato mixed with flour and butter comes from Preston. Originally it was used to make the most of left-over mashed potatoes.
Ingredients:
450g floury potatoes, peeled and boiled until tender
1/2 tsp salt
60g butter
100g self-raising flour
freshly-ground white pepper, to taste
Method:
Mash the potatoes with the salt, butter and pepper until smooth. Stir in the flour to give a smooth dough.
Turn out onto a lightly-floured work surface then knead lightly and roll out to about 1cm thick. Cut into triangles or rounds with a pastry cutter. Oil a griddle or frying pan and cook for about 5 minutes on each side, or until golden brown and cooked through.
