Ingredients:

4 small carrots, finely chopped
2 small onions, finely chopped
400ml water
1 tbsp butter
2 tbsp curry powder (Turkish curry powder for preference)
1 tsp mixed spice
1 tsp ground coriander seeds
2 tbsp red lentils
coriander leaves, shredded, to garnish

Method:

Melt the butter in a pressure cooker. Add the onions and fry for about 8 minutes, or until golden brown. Add the carrots and lentils then pour in the water. Cover and steam for about 10 minutes, or until the carrots are just soft.

Now stir in the curry powder, mixed spice and coriander. Cover the pressure cooker, bring up to pressure and cook for 10 minutes. Release the pressure quickly and turn the soup into a blender or food processor.

Place in a pan and heat through then turn into a bowl. Garnish with a little shredded coriander leaves and serve.
