Poulet au Gingembre (Ginger Chicken) is a traditional Malagasy recipe (from Madagascar) for a classic dish of chicken stewed with onions, ginger, garlic and cloves in chicken stock until tender. Ingredients:
1 chicken, cut into serving pieces
2 onions, chopped
50g fresh ginger, grated
3 garlic cloves, chopped
2 cloves
2 tbsp oil, for frying
500ml chicken stock
salt and freshly-ground black pepper, to taste
Method:
Season the chicken pieces to taste. Heat the oil in a casserole dish, add the chicken pieces and fry until golden brown then add the onion, ginger and garlic.
Fry for about 6 minutes, or until the onion is just beginning to colour then pour in the chicken stock and add the cloves. Bring to a simmer, cover the pan and cook gently for about 35 minutes, or until the chicken is tender.
Adjust the seasonings to taste and serve accompanied by rice.
