Chicken with Peanuts, Togo Fashion: A stew of roast chicken and peanuts in a chicken stock and peanut base flavoured with fermented locust beans.

Ingredients:

1 oven-ready chicken (about 1.5kg)
200g peanuts
1l chicken stock
1 tsp nététou (fermented locust beans)
1 tsp freshly-ground black pepper
oil for frying
salt, to taste

Method:

Spit-roast (traditional) or oven-roast the chicken until nicely coloured but only 3/4 done. Meanwhile, mix together the salt, black pepper and nététou in a bowl.

Joint the chicken and rub with the spice mixture then set aside.

Peel the peanuts and dry-fry in a pan until lightly coloured. Turn into a cloth and rub to remove the husks. Turn the cleaned peanuts into a food processor or coffee grinder and reduce to a powder.

Mix the peanut powder with a little water to a smooth paste. Turn into a pan heat gently to the consistency of a thick porridge.

Coat each chicken piece in the peanut paste.

Heat a frying pan, add a little oil and when hot add the chicken pieces. Fry the chicken pieces until nicely browned on all sides then serve.
