Potted Prawns: Classic British recipe for a classic method of preserving cooked prawns (shrimp) in spiced butter, served turned out onto a plate and garnished with salad.
Method:
If using fresh prawns, shell and add to a frying pan. Fry until they have all turned pink then set aside and use as the frozen prawns.
Melt the butter and simmer gently for 5 minutes to allow a white foam to rise. Then line a sieve with a piece of muslin or a clean J-cloth. Place this over a clean pan and strain the butter through it. Return to the heat and add the prawns and cayenne. Season with the black pepper and simmer for a further five minutes. Divide between six small dishes to set, and when almost still decorate the top with the parsley and capers.
Chill until required and serve at room temperature with warm toast. (Can be prepared the night before for a party).
