Potato and Parsley Galettes: An Irish recipe for an accompaniment of little fried cakes made from a blend of potato, parsley, lemon zest and garlic bound with eggs, flour and milk.

Ingredients:

675g waxy potatoes, peeled and coarsely grated
3 tbsp fresh parsley, chopped
2 tbsp finely-grated lemon zest
2 garlic cloves, finely chopped
3 eggs, lightly beaten
40g plain flour
5 tbsp milk
salt and freshly-ground black pepper, to taste
oil for frying

Method:

In a bowl, mix together the potatoes, parsley, lemon zest, garlic, eggs, flour, milk and seasonings. Beat the ingredients well until the mixture has the consistency of double cream.

Heat 1 tbsp of the oil in a frying pan. Drop in the potato mixture by the tablespoonful, spreading each one out to form circles about 6mm thick. Fry these briskly for about 2 or 3 minutes per side, or until golden brown.

Using a fish slice transfer to kitchen paper to drain. Keep the first batch warm as you cook the remainder (add more oil as needed). Serve hot, as an accompaniment.
