Ingredients:
500g neck of mutton
1kg potatoes, peeled and sliced
3 onions, peeled and chopped
1 carrot, scraped and grated
salt and freshly-ground black pepper, to taste
Method:
Place the mutton in a pot with 2l water. Bring to a boil then add the potato slices along with the onions and grated carrot.
Bring the mixture to a boil and cook for 2 hours, or until the soup is thick and the potatoes are pulpy. If desired, the neck of mutton can be removed at this point, the meat taken off it, shredded and returned to the soup.
