Combine the potatoes, butter, eggs, onion, salt and paprika together in a bowl. Mix to combine thoroughly then transfer into a well-buttered 1.5l baking dish and pour the milk over the top.
Set in an oven pre-heated to 170°C (325°F/Gas Mark 3) and bake for 40 minutes. Take out of the oven, sprinkle the cheese over the top then return to the oven and continue baking until the cheese has melted and browned slightly (about 20 minutes). Serve hot.
