Potato and Broccoli Gratin with Goat's Cheese: An Irish recipe for a vegetarian dish of mashed potatoes blended with pureed broccoli that's topped with sliced goat's cheese and grilled before serving.
Ingredients:
675g potatoes (scrubbed clean, but not peeled)
300g broccoli florets
15g butter
4 tbsp double cream (or fromage frais)
85g log of goat's cheese, sliced thinly
freshly-grated nutmeg, to taste
salt and freshly-ground black pepper, to taste
Method:
Bring a pan of water to a boil. Add the potatoes and cook for about 35 to 40 minutes, or until very tender. Drain the potatoes and set aside until cool enough to handle.
In the meantime, bring another pan of water to a boil, add the broccoli and cook for about 10 minutes, or until tender. Drain then process in a blender or food processor to purée.
When the potatoes have cooled peel them then mash in a bowl with the cutter or cream and fromage frais. Mix in the broccoli then season with salt, black pepper and nutmeg.
Spoon the resultant mixture into a buttered baking dish or ramekin. Level the surface then cover with the slices of goat's cheese. Place under a pre-heated grill (broiler) and cook until the cheese is beginning to bubble and brown (about 6 minutes).
