This is the Portuguese version of how to cook gooseneck clams (Pollicipes pollicipes). This is a simple recipe, but with delicious results.
Ingredients:
500g gooseneck barnacles
2l water
1 ½ tbsp coarse sea salt
Lemon wedges, for serving
Method:
Begin by cleaning the barnacles. Gently scrub any debris or dirt off the barnacles under cold running water then remove any visible impurities using a soft brush.
Combine the water and salt in a 4l saucepan. Bring to a boil over medium heat, stirring to dissolve the salt.
As soon as the water is boiling, add the gooseneck barnacles and bring to a simmer. Cook for about 5 minutes, or until just tender.
Drain immediately, allow to cool and then chill before serving.
Arrange on a serving dish and accompany with lemon wedges.
