This is a classic Northern Irish rich fruit cake that keeps very well and matures on keeping.

Ingredients:

225g self-raising flour
1/2 tsp baking powder
100g butter, softened
100g light brown sugar
1 tsp ground mixed spice
finely-grated zest of 1 lemon
150ml porter beer (or use stout)
2 eggs
350g mixed, chopped, dried fruit

Method:

Combine the flour, baking powder, butter, sugar, spice, lemon zest, porter and eggs in a bowl and beat for about 3 minutes, or until thoroughly combined. Add the dried fruit and stir to mix then turn the batter into a greased and floured deep 18cm diameter cake tin.

Level the top then transfer to an oven pre-heated to 170°C and bake for about 90 minutes, or until the top is golden brown and a skewer inserted into the centre of the cake emerges cleanly. Set aside to cool completely in the tin then wrap in greaseproof (waxed) paper and foil. Place in an air-tight tin and set aside to mature for 1 week before serving.
