Portakal Receli (Orange Jam) is a traditional Turkish recipe for a jam made with chopped oranges. The full recipe is presented here and I hope you enjoy this classic Turkish version of: Orange Jam.

Ingredients:
4 oranges (chose ones with thick skin)
1kg granulated sugar
juice of 1 orange
Method:
Finely grate the orange zest and transfer to a large pan. Cover with water and bring to a boil then reduce to a simmer and cook for 45 minutes, or until softened. Drain in a fine-meshed sieve and set aside. Add the sugar to a pan along with a little water and heat until the sugar has melted. Meanwhile, chop the oranges into small pieces (removing and pips) then add to the melted sugar along with the cooked zest. Turn to coat, cover the pan and cook for 45 minutes over medium heat.
Add the lemon juice and stir to combine. Take off the heat then allow to cool for a few minutes before transferring to jars that have been sterilized and warmed in an oven pre-heated to 120°C for 10 minutes. Secure with lids and store in a cool cupboard for at least 3 weeks before using.
