Pork and Ginger Dumplings a Classic Chinese recipe for a dish of pork mince and cabbage dumplings in wanton wrappers served with a ginger dipping sauce.
Ingredients:
500g pork mince (not too lean)
1 tbsp light soy sauce
1 1/2 tsp salt
1 tsp Shaoxing rice wine
1/2 tsp sesame oil
100g cabbage, very finely chopped
2 tsp fresh ginger, minced
2 tsp spring onions, finely chopped
1/2 tsp ground white pepper
50 round wonton wrappers (should be about 7cm in diameter)
For the Dipping Sauce:
1 tbsp soy sauce
1 tbsp vinegar
1/2 tsp sugar
1 tsp fresh ginger, chopped
Method:
For the dipping sauce, stir all the ingredients together then set aside.
For the filling, mix together the pork with the light soy sauce and 1/2 tsp salt. Stir carefully (always stir in the same direction) to create a thick paste. Add the rice wine and the sesame oil and continue mixing in the same direction. Cove with clingfilm and set aside to rest for 20 minutes.
In the meantime, sprinkle the cabbage with the remaining salt. Add the ginger, spring onions and white pepper and knead for 5 minutes so that you have a thick paste. Combine with the pork filling.
For the dumplings, place about 1 tbsp of the filling in the centre of each wonton wrapper (this is easiest done if you hold the skin in the palm of one hand). Moisten the edges of the skin with water then seal the edges with 2 or 3 pleats on each side to form a rough half moon. Set the dumplings aside on a floured board as you finish them.
Bring 1l water to a rolling boil in a large saucepan. Drop in about 20 dumplings per batch, stirring gently with chopsticks to prevent them from sticking together.
Cover the pan then bring back to a boil and cook for 2 minutes. Uncover the pan and add 225ml cold water. Bring back to the boil, cover the pan and cook for 2 minutes more,
Serve the dumplings accompanied by individual bowls of dipping sauce.
