Monkfish Skewers with Coconut and Coriander: Classic British recipe for a barbecue dish of pork and apple kebabs with a mustard glaze served with a mustard sauce.
Ingredients:
500g pork fillet
2 eating apples (any fairly tart apple is good)
a little lemon juice
1 lemon
2 tsp wholegrain mustard
2 tsp Dijon mustard
2 tbsp apple juice (or orange juice)
2 tbsp sunflower oil
For the Mustard Sauce:
1 tbsp wholegrain mustard
1 tsp Dijon mustard
6 tbs single cream
crusty brown bread, to accompany
Method:
Begin with the mustard sauce. Combine the mustards in a small bowl and slowly beat in the cream. Set aside to stand as you prepare the kebabs.
Cut the pork fillet into even bite-sized pieces. Core the apples then cut them into thick wedges about the same size as the pork.
Toss the apple wedges with a little lemon juice (this prevents them from browning). Cut the lemon into slices.
Take four skewers (if using wooden ones soak in a bowl of water for at least 20 minutes before use) and alternately thread the pork, apple and lemon slices onto them (to be a little more decorative, you can wrap the pork in the lemon slices before adding to the skewers).
In a bowl, mix together the mustards, fruit juice and oil. Brush this mixture liberally over the kebabs then barbecue them over hot coals for between 10 and 15 minutes, turning frequently and basting with the remaining marinade.
When cooked, transfer the kebabs to a warmed serving plate. Spoon over a little of the mustard sauce and serve accompanied by the crusty bread.
