Porc aux Choux de Chine (Pork with Chinese Leaf) is a traditional Malagasy (from Madagascar) recipe for a classic stew of pork and Chinese leaf in an onion base. Ingredients:
1kg pork loin, cubed
2 onions, sliced thinly
600g Chinese leaf, washed and shredded
salt, to taste
Method:
Place the meat in the base of a flame-proof casserole dish. Pour in enough water to cover the meat, bring to a boil, reduce to a simmer and cook, covered, for about 30 minutes, or until the meat is tender.
Stir in the onions and Chinese leaf and season to taste. Bring back to a simmer, cover and cook gently over low heat for about 20 minutes more, or until the sauce is thick.
