These classic pastry twists with their cheese filling and poppy seed or sesame seed coating are typically served with drinks and make a great nibble to go with aperitifs.

Ingredients:

115g flaky pastry (ie made with 115g plain flour)
75g mature Cheddar cheese, grated
poppy seeds, to decorate
sesame seeds, to decorate

Method:

Prepare the flaky pastry as in the recipe.

Turn the pastry onto a floured work surface, roll out fairly thinly then evenly scatter over the Cheddar cheese. Fold the pastry over and press gently with a rolling pin to sandwich the cheese in the centre.

Cover and set aside in a cold place to chill for at least 30 minutes before use.

When chilled, roll the pastry out on a lightly-floured work surface to a rectangle about 18 x 24cm in size. Brush with egg then cut into strips about 15mm wide.

Sprinkle half with poppy seeds and the remainder with sesame seeds then twist the ends to form a spiral shape and arrange these on a baking tray.

Transfer to an oven pre-heated to 200°C (Gas Mark 7) and bake for about 20 minutes or until the pastry is well puffed up and golden. Transfer to a wire rack to cool before serving.
