Poke

Poke is a traditional Cook Islands recipe for a classic dessert of cooked bananas mixed with milk, arrowroot that's baked and served in coconut milk. The full recipe is presented here and I hope you enjoy this classic Cook Islands version of: Poke.

Ingredients:

1.1kg bananas
2 tbsp granulated sugar
250ml whole milk
500ml water
200g arrowroot
1 coconut (or 200ml coconut milk)

Method:

Peel the bananas and mash roughly. Add them to a pot along with the 500ml water. Bring to a boil and cook until the bananas assume a purplish colour (add more water if needed). Take off the heat and allow to cool naturally.

Pour the banana mixture in to a large bowl and mash before adding the arrowroot, sugar and milk. Mix well then butter a baking dish and pout the mixture into this. Place in an oven pre-heated to about 190°C and bake for about 35 minutes, or until set and golden brown. Take from the oven and cool before tipping out of the tin.

Meanwhile grate the coconut flesh and prepare coconut milk by pouring 220ml hot water over the top. Allow to sit for a few minutes then strain through a sieve and extract the coconut milk. Take your baked poke and cut into medium-sized squares. Place in a bowl and pour the coconut milk over the top. Allow to soak into the poke and serve.
