Ingredients:

1kg of boned belly pork
juice of 1 lemon
freshly-grated zest of 1 lemon
2cm length of ginger, peeled and julienned
5 garlic cloves, peeled and julienned
1 tsp groundnut oil
1 tbsp ground cumin
salt and freshly-ground black pepper, to taste

Method:

Combine the garlic, ginger, lemon juice, lemon zest, oil and cumin in a bowl. Brush this over the pork belly, then sit the belly in the marinade and allow to marinate for 60 minutes, turning the belly and brushing it frequently with the sauce.

During this time prepare your barbecue. Once hot, add the meat and cook for about 8 minutes per side (be careful as the fat drips onto the coals that the meat does not scorch).

Season with salt and black pepper and serve immediately.
