Pó de Caril (Portuguese Curry Powder)

Ingredients:
3 tbsp coriander seeds
1 1/2 tbsp cumin seeds
1/2 tsp fennel seeds
1 tsp fenugreek seeds
1 dry chilli
2 cloves
seeds from 1 green cardamom pod
1/3 cinnamon stick, crushed
1 dried curry leaf (or use a dried bay leaf)
Method:
Place a small non-stick frying pan over medium heat. Once hot add the coriander seeds, cumin seeds, fennel seeds and fenugreek seeds. Dry toast these for 2 minutes then add the whole chilli, cloves, cardamom seeds and cinnamon stick.
Continue toasting for 1 minute until the spices are dark brown and aromatic (but be careful they do not burn). Turn out onto a plate and allow to cool.
Once cold turn into a spice or coffee blender then crumble in the curry or bay leaf. Grind to a fine powder then allow to cool completely before transferring to an air-tight jar.
Store in a cool, dark, place. The curry powder should keep good for up to 2 months.
