The word 'plun' for banana originated on Pitcairn Island as an abbreviated form of plantain. The two main varieties of banana are the fruit or sweet banana and the plantain. As many Norfolk Islanders came from Pitcairn, the word came with them.
Peel and cook the green bananas by boiling and drain in a colander overnight.
The next day mash the green bananas, sift in the sugar and flour and add the coconut milk.
Mix everything together, mashing to ensure they're fully combined then transfer to a well-greased baking tin and bake in a moderately hot oven (180°C) for about 1 hour.
