Pittu

Pittu, a Classic Sri Lankan recipe for a snack or dessert of rice flour and plain flour mixed with desiccated coconut that's steamed in a pittu pipe and served with salted coconut milk.

Ingredients:

220g rice flour (red rice flour or white rice flour)
240g plain flour
150g desiccated coconut soaked in 180ml water
salt, to taste

Method:

Combine the rice flour, plain flour and coconut (drain and reserve any excess water) in the bowl of a food processor. Pulse to blend and chop, then add the reserved coconut water a little at a time, pulsing to blend with the flours.

Add just enough water to bring the ingredients together as coarse granules. Traditionally, the pittu were made by packing the flour mixture into hollow bamboo sections and steaming these in a steamer for about 5 minutes, or until cooked through.

Today, however, the pipes of a pittu maker would be filled before steaming for the same amount of time.

Serve hot with lunu miris and salted, warmed, coconut milk.

If you want variegated pittu, as shown in the picture, make half the mix with red rice flour and half with white rice flour, then pack the pittu pipe alternately with the red and white mixture.
