Here is a great snack, coloured green for St Patrick's day.
Pistachio Fudge: An American recipe for a fudge made with cream cheese, white chocolate and pistachios coloured green for St Patrick's day, shown cut into squares.
Ingredients:
500g white chocolate
225g cream cheese, softened (you can use my
home-made cream cheese recipe to prepare your own)
450g icing sugar
1/2 tsp vanilla extract
1/4 tsp almond extract
1/8 tsp green food colouring
75g pistachio nuts, finely chopped
halved pistachios, to garnish
Method:
Line a 20cm square baking tin with foil, ensuring that the foil overhangs the sides of the tin.
Melt the white chocolate either in a bain-marie (double boiler) or in a microwave.
Beat the cream cheese in a large bowl until smooth, then gradually work in the sugar until well blended. Now blend in the melted chocolate along with the extracts and green food colour.
Beat the ingredients together well then stir in the chopped pistachio nuts. Grease the foil lining the baking tin then spread the chocolate and cream cheese mix in the tin.
Garnish the top with the halved pistachios. Allow to cool, transfer to the refrigerator and chill for at least 60 minutes, or until firm.
Using the foil to help you, carefully lift the fudge from the baking tin onto a chopping board.
Cut into 3cm squares and store in the refrigerator.
