Pisken Balyk (Boiled Fish)

Ingredients:

1kg carp (sazan) or catfish
100g carrots, chopped
100g onions, chopped
50ml oil
75g butter
175g tomato purée
330ml water
750g potatoes, cubed
salt and freshly-ground black pepper, to taste
cayenne pepper, ground cumin, ground coriander, to taste

Method:

Fillet the fish and dice the vegetables. Melt the butter in a pan then add the carrots, potatoes and fish. Fry for about 10 minutes, until the vegetables are just softened.

In the meantime, fry the onion in the oil until golden (about 10 minutes) then stir into the vegetable and fish mix along with the tomato purée. Pour over enough boiling water to cover, bring to a simmer then season with salt, black pepper and spices.

Cook over low heat for about 20 minutes, or until everything is tender. Ladle into deep serving plates and serve with chopped greens.
