These are traditional Icelandic biscuits (cookies) that are always served as a Christmas treat.

Ingredients:

300g butter, softened
250g caster sugar
180ml golden syrup (light corn syrup)
2 eggs
375g plain flour
1/2 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground cloves
1/2 tsp ground ginger
generous pinch of freshly-ground black pepper

Method:

Cream together the butter and sugar in a large bowl. Stir-in the golden syrup and the eggs and beat well to combine. Meanwhile sift the flour, baking powder, baking soda, salt, cinnamon, cloves, ginger and pepper into another bowl. Slowly add the dry ingredients to the butter mixture and combine until smooth. Place the dough in the refrigerator over night to firm up.

The following day roll the dough out on a lightly-floured surface until about 6mm thick. Cut out the biscuits with a 5cm pastry cutter and place at least 3cm apart on a lightly-greased baking tray. Place in an oven pre-heated to 175°C and bake for about 8 minutes, or until the biscuits are nicely golden.

Allow to cool on the baking tray for 5 minutes then transfer to a wire rack to cool completely. Store in an air-tight tin or jar.
