Phulka (Puffed Flatbread)

A phulka is a puffed flatbread that's the North Inidan equivalent of rotis/chapatis. This is a very common accompaniment to curries.

Ingredients:

125g (1 cup) Whole Wheat Flour (plus more for dusting)
1/2 tsp Salt (or to taste)
1 tsp Oil
Ghee, for serving

Method:

Sift together the flour and salt into a bowl. Work in just enough water to form a firm dough.

Turn onto a floured work surface and knead for a few minutes, until smooth and elastic. Place in a bowl, add 1 tsp oil and rub to coat the dough, then knead for a few more minutes until smooth.

Cover the dough and Set aside to rest 15 minutes. Knead once again and divide the dough into 8 pieces.

Pre-heat an iron skillet or heavy-based frying pan over medium high heat. Roll the pieves of phulka dough into balls, then flatten these balls with the palm of your hand.

Take the first portion of phulka dough, toss it in flour and roll out into thin circles to approximately 15cm in diameter. As you roll the pieces out, keep tossing the dough in dry flour while rolling (this will prevent it from getting sticky when rolling them out).

If you wish, you can roll out all the dough, stacking them separated by greaseproof (waxed) paper as you wait to cook.

To cook on a Gas Stove: Place rolled dough on the hot skillet/frying pan. In a few seconds you will notice that small air pockets start to form. At this point flip the rolled dough to the other side on the pan.

After a few seconds turn the flame to high, then using tongs take the rolled phulka dough out of the pan and place it directly on the flame. It should balloon into a spherical shape and puff up. This is your phulka.

Remove the phulka from the heat, place it on a flat plate and optionally spread little ghee on the side facing up. Continue preparing the remaining portions of the rolled phulka dough in the same way, stacking them as they're done.

To cook on an Electric Stove: Start cooking the phulka dough in a pan as above. Once you have cooked on the second side, as above, flip over again and cook the first side pressing lightly with a napkin. The rolled out phulka dough should begin to start puffing up.

Flip and cook the other side for a few more seconds. Remove from the heat, place the phulka on a flat plate and optionally spread little ghee on the side facing up. Continue the same process for the remaining portions of the rolled dough and keep stacking them the phulka one over the other.

Serve to accompany any gravy-based Indian dish.
