This is a classic recipe for a Victorian version of Preserved Bilberries that's derived from Robert Kemp Philp's 1859 volume, The Dictionary of Daily Wants. Below you will find both the recipe in its original form and a modern redaction.

Original Recipe



BILBERRIES, TO PRESERVE.—Put the berries into a bottle, cork and seal it, place it in a kettle of cold water, and gradually let it boil. As soon as it boils, take it off and let it cool; then take the bottles out, and put them away for winter use.

Modern Redaction



Ingredients:

2kg bilberries

Method:

Wash the bilberries and remove any stalks. Dry thoroughly then pack into jars. Seal the lids securely then place the jars in a large pan (pack them tight so they cannot move. Pour in cold water then place on the hob and gradually bring to a boil.

Immediately take off the heat and set aside until the water cools completely. Take the jars out then set aside for winter use.
