Ingredients:

For the Cake:
550g Copycat Duncan Hines Cake Mix (or 1 box shop-bought yellow cake mix)
2 large eggs
100g butter, softened

For the Topping:
240g cream cheese, softened
450g icing sugar, sifted
2 large eggs
1 tsp vanilla extract

Method:

Combine the cake mix, 2 eggs and butter in a large bowl. Beat together until the batter is smooth (if it's a little too stiff add some yoghurt or milk) then spoon into a well greased and floured cake tin (about 33 x 22cm). Now cream together the cream cheese, icing sugar, 2 eggs and vanilla extract. Beat until smooth then pour the mixture over the cake base.

Transfer to an oven pre-heated to 170°C and bake for about 35 minutes, or until the top of the cake is golden brown and a skewer inserted into the centre of the cake emerges cleanly. Allow to cool in the tin for 15 minutes then cut into squares and set aside to cool completely before serving.
