Pepper Pasta Pie

This is a make-ahead dish that's delicious served warm or cold. It's great served for a picnic and works well as the carbohydrate component of a braai (barbecue).
Ingredients:
150g (1/3 lb) penne pasta
1 tbsp olive oil, plus extra for greasing
1 red onion, thinly sliced
1 garlic clove, finely chopped
1 red bell pepper, sliced
1 yellow bell pepper, sliced
100g (3 1/2 oz) frozen garden peas
75g (3oz) mature cheddar, grated
4 medium free-range eggs, beaten
50g (2 oz) fresh soured cream
50g (2 oz) toasted pine nuts
½ tsp crushed chilli flakes
100g (3 1/2 oz) Italian-style salad, to serve
Method:
Pre-heat your oven to 180°C (160°C fan/355F/gas mark 4). Cook the pasta according to the packet instructions (about 10 minutes), then drain.
In the meantime, heat the oil in a frying pan. Cook the onion, garlic and peppers for 5-10 minutes, adding in the peas for the last 2 minutes.
Stir in three-quarters of the cheese, the eggs, soured cream, toasted pine nuts, chilli flakes and drained pasta, then cook for a further 1 minute, until slightly thickened. Season and pour into a lightly greased 16cm loose-bottomed cake tin.
Scatter over the remaining cheese, transfer to your pre-heated oven and bake for 45 minutes until set. Cover with foil after the first 20 minutes to prevent the top from drying.
Remove from the oven and set aside to cool for 10 minutes before cutting into slices and serving with the salad.
