Peasant Soup a Classic British recipe for a country-style soup of bacon, leeks, celery, carrots and courgettes (zucchini) in a chicken stock and tomato puree base.

Ingredients:

25g butter
2 tbsp vegetable oil
100g streaky bacon rashers, rinds removed and diced
450g leeks, chopped
5 celery sticks, thinly sliced
350g carrots, thinly sliced
350g courgettes, thinly sliced
1 large Spanish onion, chopped
1 garlic clove, crushed
1.75l chicken stock
1 1/2 tbsp tomato purée
4 tbsp parsley, chopped
salt and freshly-ground black pepper, to taste

Method:

Combine the butter and oil in a pan. Heat gently until the butter has melted then add the bacon and fry briskly for 3 minutes before stirring in the vegetables and garlic.

Cover the pan and cook the ingredients gently for 20 minutes. Now stir in the stock and season to taste. Bring to a boil then reduce to a simmer, cover and cook gently for 2 hours.

Just before serving, stir in the tomato purée and the parsley. Ladle into warmed soup bowls and serve.
