Pear and Blackberry Cobbler: A British recipe for a classic dessert of pears and blackberries served topped with a buttermilk cobbler dough that's oven baked and served with custard.

Ingredients:

500g pears; peeled, cored and cut into wedges
400g fresh blackberries
200g golden caster sugar
1/2 tsp ground cinnamon
1 tbsp cornflour (cornstarch)
175g self-raising flour
75g unsalted butter, well chilled and cubed
125ml buttermilk

Method:

Arrange the pear wedges and blackberries in the base of a rectangular ovenproof dish (about 26 x 16cm). Sprinkle over 50g of the golden caster sugar, the cinnamon and the cornflour then gently stir these ingredients together to mix.

For the cobbler topping, combine the flour, butter and 100g sugar in a food processor. Pulse gently to whizz for a few seconds until crumbs form. Add the buttermilk and mix briefly until the ingredients come together to a soft and squidgy dough.

Scatter clumps of this dough over the fruit mixture then scatter the remaining sugar over the top. Transfer to an oven pre-heated to 200°C (Gas Mark 6) and bake for 40 minutes, or until the fruit is tender and the topping is pale and golden.

Serve hot, accompanied by cream or custard.
