Pe ni lay hin cho (Lentil Soup) a Classic Myanmar recipe for a curry of prawns (shrimp) in a spiced tomato, onion and green chilli base.

Ingredients:

400g lentils
2 onions
5 tbsp vegetable oil
2 tsp salt (or to taste)
2 tsp fish sauce
1/2 tsp ground turmeric

Method:

Thinly slice the onion, then fry in the oil until golden brown. Remove from the oil with a slotted spoon and set aside.

Wash and pick over the lentils. Place in the pot with the oil, add 100ml then stir in the ground turmeric.

Bring to a boil and fry the mixture briefly, until aromatic then stir well to combine.

Add 1.5l water along with the salt and fish sauce. Bring back to a boil, reduce to a brisk simmer, cover and cook for about 20 minutes, or until the lentils are tender.

Turn into a warmed soup tureen and sprinkle over the fried onions.

Serve immediately.

This soup is a traditional accompaniment to chicken or beef curry.
