Ingredients:
4 spring onions, sliced very thinly
100g flat-leaf parsley, chopped
100g fresh coriander, chopped
100g fresh dill, chopped
salt and freshly-ground black pepper, to taste
3 large eggs, beaten
70g plain flour
60ml corn oil, for frying
Method:
Combine the herbs in a bowl and season with salt and freshly-ground black pepper. Add the eggs and flour and mix well by hand, until thoroughly blended.
Heat the oil in a deep frying pan or skillet and when almost smoking drop the herb batter into the oil by the heaped tablespoon. Use the back of the spoon to shape them into a round fritter. Fry over moderate heat for about 2 minutes per side. Remove with a fish slice or slotted spoon and drain briefly on kitchen paper.
Continue frying the remaining batter in the same matter. Serve either warm or at room temperature as an starter with drinks or as a side dish to accompany other Georgian foods.
