This is a classic example of Mumbai street food, where spiced vegetables are cooked in a tomato and onion base with spices until thick and served in a bread bun.
Ingredients:
2 large potatoes, peeled and boiled
200g (7oz) frozen, mixed vegetables (green peppers, carrots, cauliflower and peas), thawed
2 tbsp butter
1½ tsp garlic paste
2 large onions, grated
4 large tomatoes, chopped
250ml (1 cup) water
2 tsp
pav bhaji masala
1½ tsp chilli powder
¼ tsp turmeric
Juice of 1 lemon
Salt to taste
1 tbsp coriander leaves, chopped
Butter to roast
4 hamburger buns, slit into half
1 large onion, finely chopped
Small slices of lemon
Method:
Mash the vegetables together well in a bowl then set aside.
Heat the butter in a pan. When the butter is foaming, add the garlic paste and onions and fry till the onions turn brown (about 10 minutes). Add the tomatoes and fry, stirring occasionally, over medium heat for 10 minutes.
Add the mashed vegetables, water, pav bhaji masala, chilli powder, turmeric, lemon juice and salt. Bring to a simmer and cook until the gravy is thick. Mash the ingredients further and cook for 3-4 minutes more, stirring continuously.
Sprinkle over the coriander leaves and mix well. Take off the heat and set aside.
Heat a flat pan. Spread some butter on it and use to toast the hamburger buns until crisp on both sides.
Serve the vegetables mixture hot accompanied by the buns, with the onion and lemon slices on the side.
