This is a classic dough made with dried and powdered cornmeal that's the basis for traditional Trinidadian pastelles. The dough can also be heated and served as an accompaniment to a meal in and of itself. In many ways it's very similar to the 'paps' and 'fufus' of African cuisine.
Ingredients:
300g masa harina (dried and powdered cornmeal dough)
2 tbsp butter (or oil)
2 tsp salt
2 tsp sugar
Method:
Add 500ml water to a large pot and bring to a boil then add the butter, salt and sugar. Stir to combine and when the butter melts add the masa harina and stir vigourously and continuously with stout wooden spoon. The final mixture should be smooth but not sticky and should come away gently from the sides of the pot when stirred.
Take off the heat and set aside to cool.
