Pasta Primavera with Dryad's Saddle and Chicken of the Woods

When collecting the Dryad's Saddle mushroom, collect only in May when very young and use only the outer part of the fruiting body, the edges and the bits furthest away from the stem, as these will be most tender.

Ingredients:

200g Dryad's saddle mushroom
200g chicken of the woods mushroom
200g dried pasta
4 tbsp soft cheese
400ml white wine
4 tbsp wild garlic (ramsons) leaves, chopped
3 tsp fresh thyme, chopped
salt and freshly-ground black pepper, to taste
fresh Parmesan shavings, to garnish

Method:

Bring a pan of lightly-salted water to a boil, add the pasta and cook according to the manufacturer's instructions (about 10 minutes) then take off the heat and drain.

Meanwhile, simmer the mushrooms in the white wine along with the thyme and wild garlic (cook for the same time as the pasta). Season to taste with salt and black pepper then add the pasta to the pan. Toss to combine then take off the heat and stir-in the soft cheese. Turn into a pasta bowl, garnish with the Parmesan shavings and serve.
