This is a classic Italian crumble-like pastry mix that is typically as a base for tarts, though it can also be used as a cheesecake base or even as a topping for fruit-based tarts and cakes.

Ingredients:

65g butter
65g sugar
1/2 tsp finely-grated lemon zest
1 egg, well beaten
210g plain flour, sifted
1/4 tsp salt
3/4 tsp baking powder

Method:

Cream together the butter and sugar until pale and fluffy. Work in the lemon zest, then add the beaten egg, a little at a time, beating thoroughly to combine after each addition.

Sift together the flour, salt and baking powder into a bowl. Now work the dry ingredients into the wet ingredients and stir well to combine. You will end-up with a crumbly pastry.
