These pasta chips (or crisps if you prefer) make an excellent snack or can be used for scooping up in your favourite dips. Farfalle (bow tie) pasta are the ideal shape. You may think it weird to deep fry pasta, but in fact this was the original way fresh pasta was prepared (indeed boiling pasta was not a thing until the late Middle Ages). Recipes for fresh pasta dough that was then fried in lard or oil go back to Greco-Roman times and there are two recipes for rye-based fried pasta strips in Athenaeus’ Deipnosophistae (c. 200 BCE). You can make these with dried pasta, it’s just that you will need to cook the pasta first by boiling to get back to the consistency of fresh pasta. Instructions are given for traditional deep frying, as well as preparing in an air fryer.
Ingredients:
500g (1 lb) farfalle (bowtie) pasta
Vegetable oil, for frying
25g (1/2 cup) freshly grated Parmesan
1 tsp Italian seasoning
1 tsp garlic powder
sea salt and freshly-ground black pepper, to taste
Method:
Add the pasta to a large pot of salted boiling water, cooking until the pasta is al dente (about 8 minutes). Drain the pasta in a colander.
Pour about 2.5cm (1 in) depth of oil in a wok or deep pan and set over medium heat. When the oil is shimmering, add about 250ml (1 cup) al dente pasta in a single layer. Cook until golden and crispy (about 2 minutes per side). Remove with a spider or slotted spoon and drain on paper towels, then season immediately with Parmesan, Italian seasoning, garlic powder, salt and, pepper.
Repeat the cooking, working in batches, until the remainder of the pasta is cooked. Serve warm, with your choice of dipping sauce.
These can also be prepared in an air fryer:
Cook the pasta, as above, until al dente (about 8 minutes). Drain the pasta in a colander then toss with the Parmesan, Italian seasoning and garlic powder.
Working in batches, place the pasta in the basket of air fryer and cook at 200°C (400°F) until golden brown and crispy (about 8 to 10 minutes), tossing halfway through. Spread onto a baking tray to cool completely.
Serve with your choice of a warm dipping sauce.
