Pashka is a traditional Russian recipe for a classic dessert of a pressed mix of cream cheese, butter, egg yolks and icing sugar flavoured with pineapple and almonds that is typically served for Easter. The full recipe is presented here and I hope you enjoy this classic Russian version of: Pashka.

Ingredients:
960g cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
200g butter
3 egg yolks
350g icing sugar
2 tsp vanilla extract
100g tinned, crushed, pineapple (drained)
105g slivered almonds, toasted
Method:
Allow the cream cheese, butter and egg yolks to warm to room temperature for at least two hours then combine in a bowl and beat until thoroughly mixed. Beat in the sugar then fold in the vanilla extract, pineapple an almonds.
Wash a 2l earthenware pot (or loaf tin) then line with a double thickness of muslin or cheesecloth that's been wrung out in cold water. Pour in the cream cheese mixture then cover with clingfilm (plastic wrap). Refrigerate over night then unmould and serve.
