Ingredients:
600g parsnips
oil for deep frying
sea salt and freshly-ground black pepper
Method:
Wash and pare the parsnips then use a vegetable peeler or a mandoline to cut the parsnips into long, thin, strips (if the core is stringy then discard this).
Heat oil in a deep fryer, wok or deep pan to 180°C (when a cube of bread added to the oil sizzles and browns immediately). Add the parsnips in batches and fry until crisp and golden brown. Drain onto kitchen paper, season with sea salt and freshly-ground black pepper then serve.
