Parkin

Parkin is a traditional English recipe (based on a Scottish original) for a classic Victorian oatmeal and ginger cake that needs to be stored for at least two days to mature before serving. The full recipe is presented here and I hope you enjoy this classic English version of: Parkin.

There are several versions of parkin made throughout England, as well as a Scottish version. This is an aggregate version as Victorian authors would recommend be made.

Ingredients:

340g medium oatmeal
180g plain flour
1 tbsp sugar
1/2 tsp ground ginger
1/4 tsp salt
115g butter
450g black treacle (molasses)
70ml milk
1/2 tsp bicarbonate of soda

Method:

Combine the oatmeal, flour, sugar, ground ginger and salt in a bowl. Meanwhile, combine the treacle and butter in a pan and warm until fluid and combined (but do not allow to get too hot). Warm the milk to body temperature then stir-in the bicarbonate of soda until dissolved. Add the milk mix and the treacle mix into the dry ingredients.

Take a Yorkshire pudding (or roasting) tin, grease thoroughly and flour well then line the base with paper. Pour the batter into this then transfer to an oven pre-heated to 180°C. Bake for about 40 minutes, or until the top of the cake is firm to the touch. Remove from the oven, allow to cool in the tin for 10 minutes then transfer to a wire rack to cool completely. Wrap in greaseproof paper and foil. Store in an air-tight tin for two days to mature before cutting into squares and serving.
