Delight in the exotic flavours of Papua with this traditional Fish Wrapped in Banana Leaves recipe. Fresh fish fillets are marinated in a mixture of aromatic spices and herbs, then wrapped in banana leaves and grilled to perfection. This unique cooking method keeps the fish moist and infuses it with a distinct, smoky flavour. Perfect for a special occasion or a tropical-themed dinner, this Papua-Style Fish will transport your taste buds to the beautiful island of Papua.

Ingredients:

For the Fish:
4 fish fillets (such as snapper or grouper)
3 garlic cloves, minced
3 shallots, minced
2 red chilies, sliced
2 lemongrass stalks, finely chopped
2 kaffir lime leaves, finely shredded
2 tbsp lime juice
1 tbsp vegetable oil
1 tsp turmeric powder
1 tsp coriander powder
1 tsp salt
1/2 tsp ground black pepper

Banana leaves, cut into large squares

To Accompany:
Steamed rice
Fresh vegetables (such as cucumbers, tomatoes, and lettuce)

Method:

For the Marinade: In a bowl, mix together the minced garlic, minced shallots, sliced red chilies, finely chopped lemongrass, sliced kaffir lime leaves, lime juice, vegetable oil, turmeric powder, coriander powder, salt, and black pepper.

Rub the fish fillets with the marinade, ensuring that each piece is well coated. Place in a dish, set in the refrigerator and allow to marinate for at least 30 minutes so the fish absorbs the flavours of the marinade.

When ready to cook, take each piece of banana leaf and either pass over a naked flame or plunge into boiling water to soften. Place each marinated fish fillet in its own square of banana leaf. Fold the leaf over the fish to create a secure package and tie with kitchen string if necessary.

Preheat your grill to medium-high heat. Grill the wrapped fish packages for 8-10 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Unwrap the banana leaves and serve the Papua-Style Fish with steamed rice and fresh vegetables.
