Discovering Panikeke was a delightful accident during my last trip to Samoa, and I’ve been obsessed ever since. These fluffy, banana-infused pancakes are my go-to for a quick, satisfying breakfast that feels like a tropical getaway.
Ingredients

2 ripe bananas (the spottier, the sweeter!)
120g plain (all-purpose) flour
1 tbsp sugar
1 tsp baking powder
120ml milk
1 egg
1 tbsp melted butter (plus extra for greasing the pan)
pinch of salt
Method:
Peel the bananas, cut into chunks then mash until smooth in a large bowl.
Whisk in the egg, milk, and melted butter, beating until completely combined.
Sift together the flour, sugar, baking powder, and salt directly into the wet ingredients to avoid clumps.
Gently fold the dry ingredients into the wet ones until just combined; be careful here, as over-mixing leads to tough pancakes.
Heat a non-stick pan over medium heat and lightly grease with butter.
Pour in 4 tbsp of batter for each pancake, cooking until bubbles form on the surface (about 2 minutes).
Flip carefully and cook for another 1-2 minutes until golden brown.
Serve warm with a drizzle of honey and a sprinkle of toasted coconut.
