This is a classic Scottish-style soda bread that has soaked oatmeal worked into the dough and which makes an excellent loaf for Burns night.
Ingredients:
250g oatmeal
250g plain flour
300ml buttermilk
1 tsp salt
1 tsp
cream of tartar
1 tsp bicarbonate of soda
Method:
Place the oatmeal in a bowl, pour over the buttermilk and set aside to soak for 2 hours.
In a separate bowl, combine the plain flour with the salt, cream of tartar and bicarbonate of soda. Add this flour mix to the oatmeal and buttermilk mix and work together thoroughly to form a dough. Knead well (add more flour or more buttermilk, if needed) then shape the dough into a round loaf and place on a baking tray.
Transfer to an oven pre-heated to 190°C and bake for about 40 minutes, or until golden brown and baked through.
