This is probably the easiest method of cooking squat lobsters, and suitable if you want to cook your catch directly on the beach.
Ingredients:
1kg (2 1/4 lbs) squat lobster meat (see the preparing squat lobsters recipe for how to extract the meats)
50g (2 oz) lightly-salted butter
2 garlic cloves, thinly sliced
2 tsp lemon juices
half a lemon
Method:
Place your pan over gentle heat, add the butter and when melted add the garlic. Fry for 2 minutes then add the lemon juice.
Increase the heat a little then add the squat lobster meats. Cook for only a minute or two, stirring occasionally. As soon as the lobster meats turn pink they are ready.
Turn onto a warmed serving dish, add a generous squeeze of lemon juice and serve accompanied by crusty bread and a rocket leaf and Parmesan cheese garlic.
