Ingredients:

150g fermented cassava starch (yuca harina)
400g queso fresco (or substitute a mild Feta cheese)
1 ½ tsp baking powder
2 eggs, beaten
¼ tsp sugar

Method:

Pre-heat your oven to 220°C.

In a food processor, combine the yuca flour, cheese, sugar and baking powder. Process until well combined.

Add the eggs slowly while food processor is running.

Divide the mixture into 12 equal size portions and shape into balls.

Arrange on a baking tray lined with parchment paper then transfer to the centre of your pre-heated oven and bake for about 15 minutes or until golden on top.

Serve warm.
