This light and flavourful fish soup is a staple in Palauan households. Fresh fish is simmered with vegetables and coconut milk for a dish that’s both nourishing and delicious.
Ingredients:
500g white fish fillets, cut into chunks
400ml tin coconut milk
1l fish or vegetable stock
1 small onion, chopped
2 garlic cloves, minced
1 carrot, sliced
1 celery stick, sliced
Salt and freshly-ground black pepper, to taste
Method:
Fry the onion and garlic until fragrant. Add the stock, coconut milk, carrot, and celery.
Bring to a simmer and cook for 10 minutes.
Add the fish and cook until opaque. Season with salt and pepper.
