Tama

More of a modern take, this is one of the go-to breakfast and snack of the island.

Ingredients:

4 eggs
180 milk
3/4 teaspoon vanilla extract
500g flour
400g sugar
3 1/2 tablespoons baking powder
1/4 teaspoon salt
oil for deep frying

Method:

Begin by heating your oil in a deep fryer, deep pan or wok to 180°C.

In a large bowl, beat together the eggs, milk, and vanilla.

In a separate bowl, sift together the flour, sugar, baking powder and salt.

Add in the egg mixture stirring until the dry ingredients are all moistened and the dough is smooth.

Drop teaspoonfuls of dough into the hot oil; fry until the golden brown and doughnuts rise to the surface.

Drain on a kitchen paper lined plate and serve hot, but they are also good when cold.

When mashed egg is blended into the batter these are called Tama Tuu
