Oysters Rockerfeller

Ingredients:

6 fresh oysters (in their shell)
60g butter
1/2 small onion, finely chopped
1 tbsp fresh flat-leaf parsley, chopped
60g baby spinach, chopped
60g fine breadcrumbs
butter for topping

Method:

Carefully open the oyster shells. Discard the top shell then loosen each oyster from the shell base. Set aside on ice to keep cool.

Melt the butter in a small frying pan, add the onion and parsley and fry for about 3 minutes, or until the onion is soft and translucent. Stir in the spinach and cook until just wilted. Now stir in the breadcrumbs and cook for 2 minutes more.

Place a teaspoon of the spinach and breadcrumb mix on top of each oyster (to cover the oyster) then place a small knob of butter on top of spinach and breadcrumb pile.

Arrange the oysters on a baking tray then place under a hot grill (broiler) and cook until golden brown.
