Oysters with Bloody Mary Sauce is a modern American recipe for a classic starter or snack of shucked oysters dressed with a Bloody Mary sauce that are served on the half-shell and which make an excellent Christmas treat. Ingredients:
24 whole oysters, shucked (reserve the deepest half-shell)
60ml tomato juice
2 tsp vodka
1 tsp fresh lemon juice
1/2 tsp Worcestershire sauce
dash of Tabasco sauce
1 celery stick
snipped chives, to garnish
Method:
In a bowl, whisk together the tomato juice, vodka, lemon juice, Worcestershire sauce and a few drops of Tabasco sauce.
Shuck the oysters and reserve the deepest of the two shells (discard the remainder), wash and dry. Slice the celery stick as thinly as you can and divide these between the bases of the 24 reserved oyster shells.
Top with the oyster meat then drizzle with the Bloody Mary mixture. Garnish each with about 1 tsp snipped chives and serve on ice.
