Orugli Vesak (Lemony Sponge Cake Dessert)

Orugli Vesak (Lemony Sponge Cake Dessert) is a traditional Croatian recipe for a classic lemony sponge cake flavoured with vanilla and almond extracts that, traditionally, is served as a dessert. Ingredients:

300g butter
450g icing sugar
6 eggs
1/8 tsp salt
1 tsp vanilla extract
1 tsp almond extract
freshly-grated zest of 1 lemon
560g plain flour
1 tsp baking powder
raisins or nuts or poppy seeds, to flavour

Method:

Cream together the butter and sugar until light and fluffy then add the eggs one at a time, beating thoroughly to combine after each addition. Now stir-in the extracts, grated lemon zest and salt.

Sift together the flour and baking powder then add to the creamed butter mixture about 150g at a time, stirring well to combine after each addition. Stir the mixture until smooth and creamy then stir-in about 3 tbsp of your chosen flavouring.

Turn the batter into a greased springform cake tin or a greased and lined loaf tin then transfer to an oven pre-heated to 160°C and bake for about 75 minutes, or until lightly golden and cooked through. Allow to cool in the tin for 10 minutes then transfer to a wire rack and allow to cool completely before serving as a dessert.
